Low carb, Vegetarian recipes - lentil loaf?

Hi - As the title goes - Im looking for low refined carb, vegetarian recipes. I was looking at some lentil loafs. Does anyone have a good one? I feel as though you can really go wrong with this one..

Hopefully, I am not hijacking your thread, but I am looking for a veggie burger recipe that my meat loving husband will tolerate.

I've tried many lentil loafs and they just never get done in the middle. Always a little too mushy in the middle.

There are so many good ways to eat lentils that aren’t lentil loaf. Why not try one of those instead?

Lentil loaves are high effort and not super satisfying. I highly recommend getting a vegetarian cookbook, flipping through it and bookmarking what looks appetizing to you. Some of my fave everyday meals are -

Chana Masala
Veggie Chili
Tofu with peanut sauce
Shakshuka
Beet and bean burger over a salad

My understanding is that lentil and bean recipes are not low carb, because they’re starchy. Maybe try something with tofu?

If you are looking for recipes with beans and lentils, I recommend Joe Yonan’s book Cool Beans. And for the PP who asked about veggie burgers, Kenji’s Black Bean burger on Serious Eats is pretty good.

That was my first thought on seeing the title, but the OP specifies low refined carbs.

That being said, I’ve never made a good lentil loaf! Always mushy in the middle.

How are lentils low carb? They definitely make my cgm spike when eaten alone. Maybe if the loaf has lots of other veggies and fat

My meat eating husband actually likes Beyond Burgers (though I know, they're not all that healthy with all the junk)... they have a kinda odd smell while cooking, but they actually taste pretty good. DH will actually purchase them of his own accord.
