Lentil loaves are high effort and not super satisfying. I highly recommend getting a vegetarian cookbook, flipping through it and bookmarking what looks appetizing to you. Some of my fave everyday meals are -
Chana Masala Veggie Chili Tofu with peanut sauce Shakshuka Beet and bean burger over a salad |

My understanding is that lentil and bean recipes are not low carb, because they’re starchy. Maybe try something with tofu?
If you are looking for recipes with beans and lentils, I recommend Joe Yonan’s book Cool Beans. And for the PP who asked about veggie burgers, Kenji’s Black Bean burger on Serious Eats is pretty good. |
That was my first thought on seeing the title, but the OP specifies low refined carbs. That being said, I’ve never made a good lentil loaf! Always mushy in the middle. |

My meat eating husband actually likes Beyond Burgers (though I know, they're not all that healthy with all the junk)... they have a kinda odd smell while cooking, but they actually taste pretty good. DH will actually purchase them of his own accord. |
