NYE, need to bring a beggie

I’m getting together with a couple of girlfriends, nothing fancy but we’re all bringing a dish to share. I’ve been asked to bring a vegetable. Any ideas? I’m open to making something myself or buying pre-made.

Ha! I wondered what on earth this was until I opened the thread and read your post. It’s hard to go wrong with Brussels sprouts and pancetta, assuming that your girlfriends eat pork. If they don’t, roasted asparagus?

They don’t eat pork. Roasted asparagus is a good idea. Ive never prepared that myself. Any tips? Can I prepare it at home and re-heat when I get there?

It’s better if you serve it right after cooking, but you could prepare everything in the baking dish beforehand, and then pop it in the oven at your friend’s house. I toss with salt and pepper, minced garlic, olive oil, and a bit of Parmesan grated on top (optional if you don’t like dairy/are vegan). A squirt of balsamic vinegar or lemon after it comes out of the oven is nice to give it some brightness.

Do the squeeze of lemon and grate some zest on top. That gives it a freshness that balsamic doesn’t give. And the zest makes it pretty and festive.

Roasted asparagus is delicious, but it's best made and eaten on the spot. I think it would get a little wimpy after transporting it.

Ina Garden’s roasted broccoli is a favorite here. I might do another tray of carrots and parsnips at the same time.

I'd do some kind of medley. Broccoli and potatoes would be good. We also sometimes do broccoli with delicata squash and they go well together. Go classic with potatoes and carrots or do a curry with potatoes and peas or cauliflower/peas/potatoes/tomatoes.

Personally I'd aimed to bring something very well seasoned. So many people are very boring with their veggies. For a party especially, I want spice and flavor. Especially a girls night, no need to worry about garlic breath!
