I need to make guac for 25 people by 6pm today. I have been so pressed for time, I ordered the avocados online shopping yesterday and when I got home, I realized they are not ripe at all. I threw in a paper bag with apples, bananas and limes overnight, hoping it would work, but they're still rock solid. I've been googling and some have suggested baking for a while, or microwaving... but I wondered if some "real" people have some real feedback. Have you ever tried anything that really worked to ripen them faster, and was the taste ok after doing it?
I would just go buy some premade guac, or even go search for a bunch more ripe avocados, but 1) the host has celiac and I'm not sure I could find true gluten free and 2) I don't want/need the original 5 bags of avos ripening on me in the next few days. Anything I can do? |
| Nope. You will have to buy guac. I dont understand why guac wouldnt be gluten free (possibly just processed in a facility that also does other things) but you can apologize to the host and explain. It's better than showing up empty handed if 25 people will be there. |

Maybe it would be - I'm probably overthinking. I use cumin and wouldn't trust my own jar (was going to use hers from her pantry, since she said even my jars could be cross-contaminated). But I just remembered I've seen just mashed avos somewhere, so maybe I can some packages of that quickly. Next question - I wonder if I can freeze mashed avo for future use and it will taste ok? I'm going to have a bunch.

Do as Debi Mazar does and use your avocados as a face and body mask when they ripen.
For your party go to Costco and pick up some ready made guacamole. |

Don't do this period the restaurant is not there to be your Mexican cuisine troubleshooting guide. Order some guacamole from them or don't call them |
I've bought large quantites of quac., salsa and chips from our local mexican food restaurant. Huge crowd pleaser for teens, in particular. Much better than store bought |

You can maybe get away with this if you puree smooth in the food processor and add a ton of avocado oil to get the proper mouthfeel. Or add crema if you're going non traditional |
| thanks all - I ended up running to the grocery and picking out ripe and ready. I tried using a couple of the less firm and they really weren't great. I guess we'll be eating lots of avos over the next week. I am going to google to figure out if I can freeze for anything other than smoothies though. |

Yes! Freeze them in the peel. Take one out and let it thaw in the fridge when you think you will want it tomorrow. It'll be fine for many purposes (like avocado toast). Maybe not for a salad. |
