Never made it and want to do it this year. The recipes call for different oil options. What recipe do you like?

Different oil options? I just use the drippings from the prime rib, and then supplement with butter if needed.

Use any oil with a high smoke point, or lard or dripping, duck fat etc.

Drippings from the prime rib. I use the Pioneer Woman's recipe - make sure you use the right kind of salt.

One recipe called for 100ml beef drippings, lard, shortening, or vegetable oil (about 1/2 cup)

+1. Making it in a muffin tin was a game changer for us.

I use the recipe from the Joy of Cooking book and I’ve been using it for more than thirty years. We started using muffin tins a few years ago and we like that.
