| beware however: I poured a full bottle of wine in a pot in the oven per Bon Appetit recipe and opened the oven halfway through and got a big singe of flame. Moral of the story: don't be tempted to check on your meat when using this amount of alcohol! Let it cook off for a good hour. |
Oh no, can you explain this in more detail? It was the ffumes that caught fire? How do you know when it's safe? Not op, but I've been interested to try some more sophisticated recipes with wine but now nervous. |
Wow! This is a lesson to be learned. I suppose the alcohol evaporated and the vapor was slow to vent from the oven. I wonder if simmering the wine for a short while on the stove and then using it in the oven might remove enough of the alcohol to prevent a flash fire. |
