Easiest low carb dinners…hopefully not with chicken

Kind of obvious from the title. Husband and I are on low carb diets and running out meal ideas. I don’t usually like chicken, which cuts out a lot of things. If you eat low carb, what are some of your go to dinners that are pretty quick?

Cauliflower steaks or cauliflower piccata are both great low carb dinners we enjy

Spinach and tomato curry with as many chick peas as you are allowed, carb-wise.

Salmon, cut into individual fillets and cooked in the air fryer if you have one. Can eat with roasted vegetables, on top of salad, whatever.

Roast salmon and broccoli on the same sheet pan - we season all different ways - often with an asian marinade, sometimes italian seasonings (I usually throw cherry tomatoes on the pan, too), sometimes lemon/garlic/oregano and I’ll toss cubed feta in before serving.

Op here…thanks! I do eat a lot of salmon. And steak, although meat has gotten so expensive. I’ve not really tried the cauliflower despite the constant mention of it with low carb. I don’t dislike cauliflower, but maybe I’m just not sure how to prepare it doesn’t taste bland.


Not a fan of curry…but I do appreciate the suggestion

It's my go-to weekday meal because it is so quick and easy and delicious (bonus for me is that my kids, I clouding a picky eater, love it). I'm not actually eating keto, and serve it over rice, but you could eat it over cauliflower rice or in a lettuce wrap if you were

Although I don't really like cauliflower rice so I just make a bunch of lightly steamed cauliflower (in big chunks). I like it that way better.

Also, your favorite pasta sauce over zoodles is very good.

Or just directly under the broiler. The Trader Joe’s BBQ cut pieces are especially good for this.

I've started making low carb soups: keto Zuppa Toscana, low carb New England Clam Chowder, Low Carb Taco Soup. Even my family of carb eaters have it for dinner and just eat bread or crackers on the side.

Zoodles with sauce
Homemade “pizzas” on a low carb tortilla with Rao’s marinara
Air fried artichokes dipped in marinara
Cauliflower rice made a million ways (Asian flavors, Mexican flavors, Italian flavors)
Egg salad (on low carb bread if you want it as a sandwich)
Konjac noodles - I don’t like the texture but lots of people enjoy them as ramen or with sauce
Omelettes or other egg dishes
Taco bowls on a bed of lettuce or cauli rice
Nachos made with protein chips (Quest, Hilo)
Salads with olives, cheese, avocado
Quesadillas on low carb tortilla

For really quick, I love seared ahi. It cooks for about 30 seconds per side. I usually serve it with rice and a steamed or roasted vegetable, but you could easily substitute the rice with a bed of greens. Arugula would be delicious.

Another favorite is a frittata loaded with vegetables - broccoli, mushroom, spinach, whatever you have on hand.

You and I have the same idea - these are the pieces I buy, and I also use the broiler sometimes. Air fryer is just less cleanup!
