“Classic” vegan cookbooks

A family member recently went vegan and I thought a nice Xmas gift could be a good vegan cookbook. Are there any classics or particularly good ones to be recommended?

It's vegetarian, not vegan, but Deborah Madison's Vegetarian Cooking for Everyone is my favorite cookbook.

I am neither, but it includes plenty of suggestions for making recipes vegan. All of the recipes have been a success for me, and even the ones that sound boring have been delicious.

(That said, you may not want to go this route if the recipient might think you don't know the difference between vegetarian and vegan.)

Moosewood Kitchen came to mind—not vegan but could be helpful
Veganomicon is a more recent, has makings of a classic
I like Bryant Terry’s cookbooks
Or you could look for a cookbook focused on a specific ingredient that is common in vegan cooking. We have a very good cookbook focused on tofu; some of the recipes are not vegetarian but I learned a ton about tofu from the book,

Bryant Terry's books are great
I also like The Korean Vegan

If they would be okay with a vegetarian cookbook that has lots of vegan recipes, I'd recommend Hetty McKinnon's To Asia with Love, and Meera Sodha's East.

Isa Chandra Moskowitz (Veganomicon) has written a bunch of vegan cookbooks.
If you’re looking for something more international I like Vegan Richa.

I love the Moosewood vibe, but honestly, have found some of the recipes to be just meh. I'd love to be convinced otherwise!

I found the Moosewood books pretty blah flavor-wise.

The Friendly Vegan is a great first cookbook. Super easy to follow and they stick to familiar ingredients and techniques.

Anything by Isa Chandra Moskowitz is great but her holiday book, Superfun Times, is my favorite.
