Raw eggs

Anonymous
I don’t mind to use raw eggs for tiramisu, mayo etc Now I need to prepare something for other people (not family) and getting very nervous about liability. Should I switch to pasteurized eggs? If so, Where could I buy them? TIA

If you are making tiramisu, I use a recipe where the eggs are heated to kill the bacteria. I can share it if you'd like.

But to answer your question, yes I would use pasteurized eggs if I was serving guests. I've never bought them (I avoid recipes with raw eggs with guests) so can't advise you as to where to find them.

While I was pregnant, we bought pasteurized eggs, just in case I forgot and licked the spoon making brownies. Didn't notice any difference at all.
