What should I make for dinner?

Parameters: has to feed 4 people for two nights
something I can make during the day and cook or reheat at dinner time in 30 minutes is an option
not pasta - we’re having that tonight
No dietary restrictions
I have a crockpot and instant pot
Needs to be fairly easy - I’m only a moderately good cook
I like an actual recipe

Any ideas? I’m really bored with what we’ve been eating

It's kinda a 90s recipe, but I made this chicken fracassee the other night and served it with gnocchi. Lots of cream, but a hit with all.

Eat them whole tomorrow, shred the rest for tacos the next day.

We like to eat ours on either rice or garlic toast and top with cheddar.
