I usually do asparagus, but I have to hold a plate for someone. I’m worried they will be mushy. I can’t cook a new serving upon their arrival. Do you have a suggestion?

Could the asparagus for their dinner be the cold salad variety? Meaning the asparagus is served cold?

Sautéed green beans. They hold well if slightly undercooked or can cook in mere minutes if you want to do on their arrival
