Roast a pork tenderloin and cubed sweet potatoes with salt, pepper, and a little red pepper and allspice.

Serve warm over mixed greens with feta/goat cheese, sliced red onion, and honey roasted almonds. I usually use a balsalmic or fig vinaigrette, but a berry flavored one would work, too.

My variation on this idea is roasted butternut (can be plain or herby or spicy), arugula, pumpkin seeds, and goat cheese with a really good balsamic. Been eating it on repeat this month!

Green leaf lettuce, a little slivered onion, some thin sliced apple, blue cheese crumbles, toasted walnuts. Whip together a quick vinaigrette with olive oil, red wine vinegar, Dijon mustard, salt, and pepper. Spoon dressing on salad. Enjoy!
