Gentle foods ideas

Have folks getting over flu that is dragging weeks where food still not sitting right for them. We have moved from the jello, saltine, banana to the various rices (rice with tumeric, rice with ginger, etc), mashed potatoes, plain butter noodles, chicken soups, chicken and rice soups, squash soup worked… any other go-to favorites as taste boredom has set in for the eaters but their stomachs still won’t take a lot of zing. As looks like may go another week, would love ideas that seem more exciting but really aren’t for the stomach.

Potato leek soup? Mine is super simple. Sautée the sliced leeks, add salt and pepper, cubbed potatoes, water and simmer until done, then blend with immersion blender. You can add a bit of heavy cream to anyone’s who can take a little dairy.

A little bit of yogurt or kefir might help if you can, to strengthen the good bacteria in your system. You might even try an OTC probiotic, but check with the pediatrician before you give one to kids, because there might be dosage issues.

Butternut squash soup. Ours has apple as well. Buy the chunks of butternut squash already cut up in the refrigerator section, or buy it frozen to make preparation easier

I invented a "zucchini carbonara" that hit the spot a few times.

Indeed, this version of the flu had my stomach feeling like I was in the first trimester again.

Anyway, sautee a zucchini in olive oil with a ton of chopped garlic and then proceed with whatever your regular carbonara recipe is. Not too heavy (I also omitted any cream) but very satisfying. I also used the Ronzi cauliflower pasta instead of regular 'cause it seemed like it might be more nutritious? I don't know.

I make mine with all kinds of ginger and garlic in the broth - for some reason it always feels super mild, even if it has a lot of flavour.

You could do a chicken and potato soup. You could thicken it by puréing some of the potatoes; add corn and/or cheese if they can tolerate it. Serve with crusty bread. Yum!
