Hi,
It will be me, my DH, 10 yr old and 5 year old - so just our family, but I’d like to make a special meal. My 10 yr old is vegetarian and the rest of us often eat vegetarian. I’m the only one who likes potatoes. Historically we’ve made the Charlie Bird Salad as our special meal. https://www.foodnetwork.com/recipes/ina-garten/charlie-birds-farro-salad-6589464.amp But I made it this week and there are leftovers so we may need a change-up. Last year I also did a roast chicken for 3 of us and vegetarian nuggets for my daughter, dinner rolls, and roasted Brussels sprouts, which are my 5 yr old’s favorite! I’m thinking rolls, pie, and broccoli or Brussels sprouts again but would like something that my 10 yr old and I can also make together and feel like we’re cooking / building a tradition. I welcome ideas! Thanks! |
| Mac and cheese, cranberry sauce (easy homemade), something stuffed - mushrooms, zucchini, something with Philo dough. Or, you could do something simple like grilled, baked or air fried tofu (with light seasoning or breaded). |
| We’re also thinking of vegetarian/vegan ideas for our family and are leaning towards a butternut squash gnocchi or risotto for the main. |

make as many sides vegetarian as possible. As a longtime vegetarian that's usually enough for me!
I have made some different pasta dishes in the past as a main, or stuffed peppers, or a roasted vegetable puff pastry bake. A marinated baked tofu could be good. My sweet and well meaning MIL made tofurkey one year though and we all thought it was pretty ick- not her fault, I think it's the nature of tofurkey. |

The ombre vegetable gratin featured in NYT cooking looks very good.
Our whole family is vegetarian and it's nice because we are freed from the traditional Thanksgiving meal, we just use seasonal ingredients in creative ways. Some of the popular ones over the years: fall vegetable lasagne with sage bechamel, cauliflower cheddar soup with mustard croutons, butternut squash soup with Thai red curry and coconut milk, twice baked leek & goats cheese souffles with a red pepper sauce, spiced fall vegetables baked in puff pastry, winter vegetable tagine with couscous... I'd recommend picking up a nice vegetable or vegetable-forward cookbook like Ottolenghi's Plenty, and looking for inspiration. |
| Pumpkin stuffed with everything good (that's the recipe's name!) or the biryani stuffed pumpkin recipe from the Post would be good projects. Also the field roast and trader Joe's celebration roasts are tasty so you could do that for a main course and focus on sides and dessert. |

We all dislike turkey, so when we don't host and are home with just us I make all the sides.
mac and cheese mashed potatoes with lots of sour cream and chives gravy onion-ey herb stuffing green bean casserole roasted brussels, butterbur squash or sweet potatoes, cauliflower and carrots with lemon, balsamic, and maple syrup cranberry sauce maybe cinnamon baked apples something like apple pie (if I didn't make baked apples) or caramel cake for dessert. or brownies! I'll do this probably Saturday or Sunday after Thanksgiving this year since we are going to a relative's house. |
| You could do stuffed halved acorn squash. I love it with Italian sausage, leeks, mushrooms and breadcrumbs but you could stuff with lentils or veggie sausage instead. Whenever I make this dish everyone says it smells like Thanksgiving. |

| I'm vegetarian and make quiche for the protein/main, and have lots of regular Thanksgiving sides. I'm not a fan of lentil loafs and things like that. |

I would do a traditional Thanksgiving meal with one side that can serve as a vegetarian main. Some ideas for that vegetarian main:
- Risotto (you said vegetarian, but not vegan, right? So cheese should be okay) - Ratatouille - Eggplant Lasagna - Shitake Mushroom Stir Fry |

I tend to roast many types of vegetables. Brussel sprouts, asparagus, carrots, butternut squash, diced potatoes, brocoli.
Pretty much whatever you want since one person likes one thing over the other. There should be at least 1 veg available for that person. I also like stuffed mushrooms. They are popular with our extended family. |
