Like vegetarian lasagna, or vegetarian shepherd's pie, or... I don't know! I always make the meat version, but we have a guest who does not eat meat.

Risotto. If you have an instant pot, it does the work for you, so you don't have to do any stirring, etc.

We like both Smitten Kitchen's Pizza Beans, and Smitten Kitchen's brisket chickpeas (not sure that's the name). I have this need to serve something green so I usually add some kind of bagged salad to both.

Lentil/vegetable soup is another thing I make that always disappears, but I don't use a recipe, and I usually serve it with grilled cheese so I'm not sure that counts as "one dish".

Fried rice -- I start with riced cauliflower (the raw kind, not the frozen) and toast it, and then onions, add brown rice, soy sauce, frozen mixed veggies, and several eggs. Could add edamame if you're vegan and don't want eggs.

I make a delicious lentil/chickpea/butternut squash* stew that is super easy to make. There are many versions, Google and find the one you like best!

*For the butternut squash, I will use either precut or frozen which is how I keep this simple

I like sweet potato black bean chili, or a 3 bean chili. Any kind of vegetarian chili is filling and not too complicated.
