We like both Smitten Kitchen's Pizza Beans, and Smitten Kitchen's brisket chickpeas (not sure that's the name). I have this need to serve something green so I usually add some kind of bagged salad to both.
Lentil/vegetable soup is another thing I make that always disappears, but I don't use a recipe, and I usually serve it with grilled cheese so I'm not sure that counts as "one dish". Egg roll in a bowl https://itdoesnttastelikechicken.com/vegan-egg-roll-in-a-bowl/ Fried rice -- I start with riced cauliflower (the raw kind, not the frozen) and toast it, and then onions, add brown rice, soy sauce, frozen mixed veggies, and several eggs. Could add edamame if you're vegan and don't want eggs. |

I make a delicious lentil/chickpea/butternut squash* stew that is super easy to make. There are many versions, Google and find the one you like best!
*For the butternut squash, I will use either precut or frozen which is how I keep this simple |
