I’m making minestrone soup tonight and hope to have that for a couple of lunches this week.

The past few weeks I’ve been cutting up cucumber, tomatoes, avocado, adding a little feta, olive oil, and hummus. It makes a delicious salad!

A sprouted grain wrap, pesto hummos, fried egg whites, and lots of cut up veggies- all rolled up

Salads from Mixt. Sometimes I also eat a couple of veggie or chicken dumplings with it.

Nice a week I have salmon on top of a cabbage/ greens mix, with cucumbers, tomatoes, peppers, slivered almonds and an Asian vinaigrette. I think that is healthy.
I often make homemade soup and have that with a piece of cheese.

Microwave large bowl of frozen stir fry vegetables with a few frozen dumplings/gyozas on top. Top with Kikkoman teriyaki sauce, Trader Joe’s furikake seasoning, and maybe some sunflower seeds.

Smoothie bowl. Protein powder, oat milk, frozen banana and peanut butter topped with fruit and granola. If I want to make it unhealthy I add Nutella on top 😁 I usually put a lot of berries for the antioxidants and can also add cacao powder, flax seed, etc.

Baby kale, brussels sprout, broccoli slaw, cabbage salad mix (Dole or similar). I don't use the poppy seed dressing. Sometimes I use 1 T of the cranberry/pumpkin seed mixture, depending on the flavor and calorie count of whatever else I'm adding.

1 T (or less) Brianna's French Vinaigrette.

Massage briefly.

Any leftover protein from the last few days, maybe also with leftover roasted vegetables. If it's plain roast chicken, I add the cranberries/seeds. If it's steak or breaded chicken or something, I don't.

I make my own burritos using whatever leftovers I can find in the kitchen. I like the precooked white chicken slices in the deli section, black beans, rice, salsa, avocado slices, tomatoes, corn. Wrap it all in a tortilla and heat for a minute and it's delicious. Sometimes they're not standard burritos, I've also used leftovers from a Greek themed dinner or white rice with Asian leftovers.
