Boneless chicken breasts: Please help me plan a quick dinner

I have boneless chicken breasts for dinner, and need ideas for something quick & yummy for dinner, as my kids have swim practice today.

I also have broccoli, carrots, lettuce, a red pepper, rice, and (I think) potatoes.

I can make bread in the bread machine.

I have the usuals in the pantry for a marinade if that's a good approach - oil, vinegar, soy sauce, garlic, various spices.

Any ideas for something that can be made in under say, 20 minutes? I can devote a little prep time at lunchtime, as I'm working at home today.

I think I'd go for a quick stir-fry or fried rice. Chop chicken and veggies into small pieces. Cook chicken in hot pan, remove from pan. Cook veggies. Add soy sauce and garlic and ginger if you have it. Stir all together, serve over rice. You can chop everything up during lunch if you want a head start.

JOy of cooking has a garlic stir fry recipe thats good. i just sub the veggies for brocolli which my kids love. Or best receipe has good recipe for sauteed chicken breasts. basically you coat in flour, fry in 1 1/2 T canola oil and 1 1/2T butter for about 4 min each side (until juice run clear). Salt and pepper (lots) before hand. Then you can make a nice sauce with chicken broth, white wine, lemon juice with what left in the pan.

For the chicken breasts - 6oclock scramble has a yummy recipe - that, if I can remember, - is something like this:

1/3 cup each of apricot jam or apple butter, honey, dijon mustard and 1/4 cup chicken broth mixed with 1 tsp of tarragon and 1/4 tsp of salt and pepper. Mix together and pour over chicken - Sprinkle 1 tsp paprika on top and pop in the oven for 30 minutes at 350 degrees. Amazingly delicious and easy.

I'd steam the potatoes and have with a bit of butter.

Then a salad with the lettuce, broccoli, bell pepper and carrots.
