What do you do with radicchio?

We got two small heads of radicchio in our CSA. How would you prepare it?

I shred it and add it to salads, delish and healthy. Like it much better than red cabbage.

Shred for coleslaw or salad

If not used fresh in a salad, then braised in red wine.

Roast it with olive oil, salt and pepper

You can use it for risotto

I have had it grilled- it was really good! I’m jealous of your great CSA

Or in a simple salad - olive oil, red wine vinegar, salt and pepper, goat cheese and pine nuts.

Throw it away.

When I lived in Italy, the grocery stores sold a combination of equal parts radicchio, frisée, arugula, shredded carrots with some walnuts. It made the best salad, especially with red wine vinaigrette and shaved Parmesan. You can also top with sliced pears or some pomegranate. So good!

Make a copycat version of my late, lamented favorite salad from Cheesecake Factory: shred; mix with sliced endive, candied pecans and blue cheese or Gorgonzola; toss with a wine vinegar vinaigrette.
