I have about 5 cups of leftover (cooked) Persian rice. It is mostly plain with a little bit of saffron. Does anyone have recipe ideas for using it up? Specific recipes are a bonus.

| Fried rice, with whatever herbs or seasoning or ingredients you like. Also good in burritos, chicken and rice soup, use it as the basis for a salad in place of another grain, or as the basis for a pilaf. |

Cutlets-
Mix in some mashed potato, few tbsp cornflour, grated ginger, chopped onion, grated carrot, chopped cabbage, salt , seasonings of choice ( salt, pepper, cumin, Garam masala). Combine everything well, make patties, roll in breadcrumbs, shallow fry in a skillet |
