Soup recipes with Great Northern Beans?

Anonymous
Not sure why I'm so stocked up, but I love them and can't remember why I bought so much! I'm interested in some recipe links for good soup (or anything else) if you've got them? Prefer vegetarian and not chili, but if it is a great recipe (tried and trusted) happy to hear, thank you!

You could sub them in navy bean soup.

I made a great one the other night.

White beans
Veggie broth carton (low sodium from Costco)
Onion diced and sautéed
1 can rotel
1 can fire roasted tomatoes
Leftover fresh green beans that were steamed, cut into thirds (so the side of canned cut greened beans)
Garlic powder

Simmered in crock pot and we ate it for dinner. DH loved it.

^^^ oh I forgot the diced zucchini

Any bean soup recipe that you like, just adjust the cooking time based on the beans you have.
Also pizza beans! I think the original recipe calls for larger beans, but they work with any kind.

Sautee carrots, zucchini and onion.
Add veggie broth or chicken broth and great northern beans.
Use immersion blender to your texture level (I like it thick, so add half the beans, use the immersion blender then add the rest of the beans and keep them whole)
Add ham bone (with lots of ham), and salt and pepper to taste.
Cut off pieces of ham, serve with crusty bread and enjoy!

Precious recipe: I forgot I also added a can of drained corn (or frozen kernels) plus a few slices mushrooms.

I love white beans. Here are some of my recipes:

Easy dip --1 can of white beans rinsed and add 1/3 to 1/2 cup pesto. Puree and add extra oil or water if too thick.

I use white beans to make Heinz-style baked beans.
