For dinner tonight I'm roasting chicken thighs with apple and fennel slices. I also want to serve a green salad with blue cheese and walnuts. Normally, I would add apple or pear to the salad, but because we'll have apple slices with the chicken, I'm stumped about what else to put in the salad. Hit me with your suggestions, DCUM foodies!
Dried cranberries
Craisins, dates or figs…
Roasted beets
|
If the apples with the chicken are cooked/roasted I would also add fresh slices.
Roasted apples are chewy and sweet and I assume cinnamon/oily/whatever whereas fresh add other dimensions such as tartness or crispness. I do this with tomatoes also (roasted + fresh in pasta dish). |
Red onion and celery
olives, celery
Thanks, all for your suggestions. I went with dried cranberries because I had them on hand. They rounded things out nicely. I'll save your other recommendations for future reference.
Dried cherries
If you have fruit in the chicken I wouldn’t put fruit in the salad too
