Tortilla soup with melted cheese “threads”?

In the 90s, I used to frequent a NYC chain called burritoville and order the tortilla soup. I’ll never forget the tangy broth, soggy chips but most of all the threads of white cheese that sort of laced through the bowl.

Has anyone made something similar or found it on a menu in the dmv?
