Deep frying Indian snacks

If you deep fry snacks (samosas, other crunchy snacks), what sort of a pot/pan/wok do you use? Or do you use a deep fryer? DS loves Indian snacks and I am trying to make them at home.

I used to use an iron kadai I brought from India but I now find the deep fryer more convenient. You can also experiment with the air fryer if you have one.
