White Chicken Chili
meat from 1 or 2 rotisserie chickens (remove from bones) 6 cups chicken stock (use bones or from a can/box) 1 jar salsa verde 2 cans of cannellini beans 1 tablespoon cumin salt and pepper to taste Put everything in a pot and bring it to a simmer. Enjoy with a slice of crusty bread. Hope you feel better soon! |

I make something similar, but throw dried white beans and chicken breasts or thighs into the slow cooker. You don't even have to soak the beans or defrost the chicken. Adding that only to spare you the tiniest bit of effort if you need it! |
