Anyone have a delicious meal for a tired cook?

Title says it all. Just recovering from Covid and looking for suggestions that aren't very labor intensive but still feel like a nice meal. Thanks in advance!

White Chicken Chili

meat from 1 or 2 rotisserie chickens (remove from bones)
6 cups chicken stock (use bones or from a can/box)
1 jar salsa verde
2 cans of cannellini beans
1 tablespoon cumin
salt and pepper to taste

Put everything in a pot and bring it to a simmer. Enjoy with a slice of crusty bread.

I make something similar, but throw dried white beans and chicken breasts or thighs into the slow cooker. You don't even have to soak the beans or defrost the chicken.

Adding that only to spare you the tiniest bit of effort if you need it!

I made the nyt chicken shawarma earlier this week and was reminded how tasty and easy it is. Had roasted veggies, naan and yogurt alongside. Sorry

I love this one too. Same concept can be done with a honey lemon marinade instead.

Which brand salsa verde do you recommend. Is it very spicy?
