Daily breakfast idea for underweight prediabetic

Looking for easy breakfast ideas without having to cook every single morning. Would freezer breakfast burritos or quesadillas be good? Any ideas for a healthy tortilla option that’s not too high in carbs or artificial ingredients?

For the filling I thought egg, cheese, spinach, black beans, and salsa. Maybe peppers and onions too? Avocado on the side.

Its not a hardship to spend 3 minutes making an egg in the morning. I've done it for years, fried egg cheese and spinach, and it literally takes me minutes. Wrap it in a corn tortilla and ya done. Wrap in a paper towel and ya done. No dishes.

I do that now but I’m finding 2 scrambled eggs and cheese and half an English muffins isn’t enough calories. I don’t want to have to open a can of black beans and worry about it all week, so it seems easier to make in bulk and freeze. Same with bacon and sausage. I don’t mind cooking it but the hassle of grease and meat smell is something I’d rather do once a week or something instead.

I am not up on the pre-diabetic related needs, but i love Amy’s frozen food for relatively healthy microwave meals. They’re vegetarian, organic etc. I particularly like the gluten free burritos and eat them for breakfast all the time

So the goal is high calorie low carb? (I am not familiar with what pre-diabetic needs are but am with under weight needs.)

I'd just think about adding lots of nuts, avocados, cheese, and and full fat dairy.

English muffin, lots of cream cheese, lox.
Avocado wrap with cream cheese and tomatoes.
Full fat yogurt, handful of peanuts, whatever you can tolerate to sweeten.

How…could you not know that? You can be pre-diabetic or diabetic at any weight.

Was just being honest… I had no idea! I have family members with type 2 diabetes and when they have lost a lot of weight and exercise they are no longer diabetic. I understand that type 1 is different. Or maybe I’m wrong about that.

Type 2 diabetes is more common in overweight/obese/inactive/unhealthy eating people for sure but there’s a huge genetic component too. Being thin doesn’t prevent type 2 diabetes.

I like your burrito idea, op.

Two other quick and healthy breakfast ideas:

full fat cottage cheese with precut veggies (I like cucumbers and cheery tomatoes) and ebtb seasoning - if you have leftover salmon it is yummy to flake some on top, too

overnight oats - lots of recipes online but I like to use almond milk, some peanut butter, blueberries, flaxseed and raw almonds

I didn’t know this either. Every time you hear about type 2 diabetes it is with very overweight people.

I am diabetic and very underweight. Type 2. It's true that it is most often associated with overweight but not always.

I’m sure most people associate diabetes and pre diabetes with weight because obesity is a common factor in diabetes. But, those of us with a genetic predisposition actual tend to be underweight.

OP, I am in this boat. I make sausage once a week and reheat pieces in the toaster over. Or use the air fryer!

Tortillas are terrible calorie, fat, and sodium bombs. At least the ones usually used for breakfast burritos.

Do overnight groats with nuts/nutbutters, fruit of choice, and some cinnamon.
