Need something healthy for a potluck...

My office is having a "healthy food potluck" lunch soon. Any suggestions on what to bring (other than the obvious fruit salad, veggies and dip, hummus and pita, which always show up in large quantities!)? The kitchen is small, so I would prefer something that can be served cold or room temp. Thanks in advance for any suggestions!

rice or couscus salad. Could probably make with quinoa, too. Add dried or fresh fruit, diced or shredded chicken, nuts, maybe a little celery and/or onion, possibly a little oil and vinegar.

granola, fruit and yogurt "parfaits" (although probably a bit pricey).

I like to make a southwestern salad with corn, black beans, diced tomatoes, a mix of peppers, red onion, cilantro, red wine vinegar, olive oil, salt, pepper and a little hot sauce. Can be served cold, room temp or warm.

I've been doing a big greek salad - romaine, cherry tomatoes, can of garbanzo beans, olives, crumbled feta and pepperoncini, topped with a red wine vinagrette that has some oregano.
