Best way to add calories to gain weight without piling on carbs and dairy?

I believe the person’s last cholesterol reading was a little high too.

My normal thinking would be to add cheese, bread and butter, a glass of whole milk. Those won’t work for the person. Any good advice? They are already doing Greek yogurt/pea protein smoothies daily and sometimes cottage cheese with berries so they don’t want to add more dairy on top of that.
