| It seems my chronically constipated 14 mo DS finally poops when he gets lots of beans, especially navy beans (they are super high in fiber). I am looking for quick, tasty bean recipes that are low in sodium. Any suggestions? |
| I make black bean burritos. Saute some onions and green peppers and garlic in olive oil. Rinse some canned blackbeans. Add these, the salsa of your choice, and shredded cheese to a tortilla and wrap. Bake until warmed through, in a dish sprayed with PAM. Top with additional salsa or cheese or sour cream if you'd like, but I like them as is. |
| Does your DS like pasta? I make a very easy and healthy pasta dish with whole wheat bow ties or penne rigate, cannellini, roasted tomatoes from Whole Foods (when I don't have time to roast my own), garlic, basil, arugula, and parmigiano reggiano. It's delicious and full of fiber. Other favorites are vegetarian chili with black, pinto, and kidney beans and a black bean and quinoa salad. |

mexican casserole - brown ground beef with taco seasoning, at the end of cooking add beans, corn, salsa (I usually end up adding ro-tel). I usually stop here, sprinkle cheese and serve it on tortillas or with chips.
The recipe calls to layer the beef mixture with sour cream and cheese and to bake it for about 20 min till bubbly. |

I have several variations of what I call "Beans and Greens." I sautee onions and garlic (however much you like) in olive oil. Add greens (spinach, swiss chard, kale, etc.) and sautee until wilted. Add a little white wine and reduce. Then add canned beans (garbanzo, cannelini, kidney, etc.). You can add whatever herbs, seasonings you like: oregano, thyme, rosemary, basil. They always come out delicious and healthy!

| equal part sweet potatoes and black beans with salsa. I use the slow cooker but you can cook them however. Have you tried pea soup? It's fast and you can have soup at the start of any meal. Buy dried peas (green or yellow) and cook, blend, serve. For me, I add carrots and onions, but straight peas are what I serve my kid. |
| For the navy beans - grate onions (my kids won't eat if they see pieces) and brown in olive oil. Add tumeric. Next add water (should be enough water to make it like the consistency of canned baked beans) and tomato paste - finally, add the cooked beans. Salt and pepper to taste. Simmer for 20 mins. Serve. I usually make the navy beans in the crock pot, and then add the tomato paste/onion mixture to the cooked beans and simmer in the crockpot for about an hour before serving. |

I use this as a replacement for re-fried beans - much healthier and tastier (I buy the no sodium beans at Whole Foods). Very yummy |
OP, I don't have a good recipe to contribute (although I'm happily taking notes of everyone else's suggestions. ).
Just wanted to say that my DS had chronic constipation also, and it turns out that the amount of milk he drank played a huge role. If he woke up during the night and had an extra serving of milk, sure enough he'd be constipated the next day. Or if we had a cake/cookie treat with a glass milk, same thing. He actually was getting more dairy than he needed, so we could safely cut back, but if we needed to, we could give him yogurt for the calcium and it actually helped moved his bowels. You probably know all this, but just a tip in case you hadn't already considered it. It used to break my heart to see him start crying from the pain/fear of pain whenever he had to go. Because it took us so long to get it under control, he was VERY late to potty train because of the fear of pain. Definitely a good idea to treat aggressively now, before it becomes an issue around p.training. |

You can also make this with low-sodium beans if you're in the mood for something with a bit more flavor. Just made it myself and it's "working", if you get my meaning

| Make a quick dip with canned white beans, chopped herbs (or try the frozen cubed basil), lemon, a big spoonful of tahini, and salt and pepper. Add a little worcestire or hot sauce if you like. Mash it a little with a fork. Serve with chips or celery sticks. Also great on toast, bagels, or as a burrito filling with some chopped lettuce and tomato. |
I make these too - they're awesome! just note that it takes longer to thicken than the recipe says. |
