Menu for Island Vacation Rental

We are going with 2 other couples to an island vacation home for four nights. We are flying to our destination in South Carolina, hitting up a grocery store and then will head to the island for 4 days. We will not be able to access a grocery store after the initial stock up. As we will have lazy long days, I'd love to cook but also don't want to bring every last ingredient with me. Suggestions for rewarding, delicious meals, that may take time to make but don't require a laundry list of ingredients? Would love foods to nibble on, breakfast, lunch and dinner ideas.

I would take a lot of spices with me, and then shop for basic ingredients on the mainland, choosing what looks fresh and appetizing. Most likely a lot of seafood.

shrimp to nibble on (make shrimp salad with some of it, ribs, chicken (cook a bunch of breast and just season or shred to make different dishes)

What island are you going to? We have a house on Dafuskie and we just have all of our groceries delivered.

what island? Kiawah and Seabrook are served by Whole foods prime delivery and a lot of instacart stores.

I doubt OP is talking about Kiawah or Seabrook. I am thinking more an actual island that require boat to vist.

We are staying at Old House Cay. It is the only house on an island about 10 minutes by boat from Hilton Head.

Charcuterie tray
Taco night (buy premade salsa, taco mix, etc)
Rotisserie chicken and veggies
Low country boil - pick up in Hilton head and just boil at the home (it’s premade in a large pot)

Pasta with meat sauce, garlic bread, salad
Stuff to make burritos (beans, beef, lettuce, tomato, cheese, sour cream, salsa, guac, tortillas)
Grilled kebabs and rice

Get a box of pancake mix--you can make pancakes, waffles, or biscuits for breakfast. Depending on their kitchen. Bring maple syrup and jam. Buy a lot of fruit--good for meals or snacking--anything left on the last morning goes into a smoothie

It really depends on what you like. I usually do pasta with meat sauce one night; something like grilled sausage and vegetables with salads another night. I’d stock up on lots of snarky type items—fruit, chips, guac, nice cheeses, dip, carrots….there’s a lot of sitting around and noshing. Maybe stuff to make cookies especially if kids will be there. And easy lunch food—tuff for quesadillas, yogurt,, maybe sandwiches.

I like the once upon a chef Peruvian chicken but that might be tough to do multiple chickens for multiple families. Maybe a marinated Persian chicken recipe and a nice potato salad?

We also make homemade daiquiris with fresh berries and simple syrup and ice—virgin or with rum or tequila.

I would bring an onion, tomato sauce and tomato paste in cans, chili pepper and red pepper flakes, brown sugar and buns (spices measured and in a zip lock) and buy chop meat or ground turkey, and bagged salad. Make a big pot of Sloppy Joes, and serve with buns and salad. Those not eating buns can put their meat directly on the salad.
