Sharing a family favorite pork chop recipe

For no particular reason, sharing an old family favorite, easy recipe that someone might like. It is easy to make, though it does have to cook for 50 minutes, so it’s an hour prep total. Also, I think of it as a fall/ winter meal but it doesn’t require an oven so it isn’t that bad to make in summer. Hope someone enjoys it.


Pork Chops and Rice

2 tsp canola oil
2-4 bone-in pork chops, about 1 inch think (with some fat and marbling; I find Wegmans typically has ones that work well)
1 medium onion, chopped
1 can stewed tomatoes (diced works, too)
1 cup Minute Rice (I use brown)
1 tsp sugar
1 tsp mustard
1/2 tsp Worcestershire sauce

In a 10-inch skillet with deep sides, heat the oil. Season chops with salt and pepper and brown, 3-4 minutes per side until nicely colored; remove to a plate
Add onions to pan and sauté until soft, about 5 minutes.
Add remaining ingredients, stir, and set chops back in pan on top of rice mixture. Bring to a bubble, then cover, turn down heat to low, and simmer for 50 minutes.
