However you cook them, soak them for 8 hours minimum first. Otherwise, you will be gassy.
I make curry with lentils. I use patak curry paste, add chicken, carrots, cauliflower and lentils. Oh so good. Add garlic naan, and it's even better. I also make lentil chili. You can google that recipe. I got it from a friend. |

I rinse lentils, but don’t soak them as I would other beans. I’ve never had any problems.
I don’t really have a recipe. Sometimes I cook them with lightly sautéed onions, cilantro, and smoked turkey. I might add garlic, ginger, garam masala…. Sometimes I add spinach. I cook it in the Instant Pot and serve with rice, and sometimes with guacamole — especially if I do a vegetarian version without the smoked meat. |

I prefer my lentils soupy and smoky. More like split pea soup as opposed to more like a curry. |

There are lots of things I like with lentils, but this one is always a hit:
Lentil-Pomegranate-Mango Salad cooked black lentils (can used canned, or cook your own) pomegranate seeds Minced red onion very finely minced jalapeno or other pepper (or not, depends who I am serving) chopped cilantro mango (I usually use frozen) Mix all that together, in whatever proportions you want Then make a dressing of lime juice, olive oil, salt and pepper and pour it over. |
