Using a bunch of eggs

Any favorite recipes that use a lot of eggs? I have an egg share as part of my CSA, fell behind on using them and have 20 eggs in the fridge. The chickens at the farm are apparently laying a lot so instead of my normal dozen when I pick up tomorrow, I’m getting two dozen.

Kids are at sleep away camp so only cooking for two right now, so any freezer friendly recipes would be especially appreciated. I found a zucchini frittata recipe that uses which will kill two birds with one stone (also have lots of zucchini), but I’ll still have three dozen to use after making that.

You can make a big batch of breakfast burritos and freeze them.

Make a dozen deviled eggs and give half to a neighbor.

Zucchini bread and muffins freeze beautifully.

Spanish tortilla (served at room temperature) is a delicious hot-weather food.

Hard boiled eggs, angel food cake, custard pie with meringue, frittata, pudding and mousse, pie crusts that you make and freeze, casseroles, frozen custard, muffins, cheese cake, pickled eggs. You can also freeze raw eggs and they’re great to use later for baking or omelettes. Just find a recipe online don’t go freezing a whole egg.

Fresh farm eggs also last at least 2-3 months minimum in refrigerator, so don’t feel you have to use them all at once. Just mark the day you received them and rotate your stock. If it gets past a couple months do the floating egg test and don’t eat any egg if the membrane doesn’t separate from the shell. If the egg feels heavy and off when you pick it up and give it a slight shake get rid of it. If that happens the entire dozen is probably bad and it’s egg test time.

Thank you for the suggestions (and for the info about farm fresh eggs lasting longer)! Planning to start by making and freezing some quiches and muffins/quick breads in addition to my frittata.

Egg salad. It can be a nice snack with a spoonful on a cracker, or you can have some for lunch. You can make a sandwich or put a scoop on a salad or a big slice of tomato or a half tomato.

I get two dozen eggs a week from a farm share and usually hard boiled one. I love egg salad and “cheater” deviled eggs as snacks.

I love egg salad. There are also a million ways to make quiche, and I believe you can freeze it.

Quiche for sure. I make a few extra to freeze.
