I poached some salmon yesterday and it has no flavor. What can I mix it with tonight so that my toddler will eat it?? Has anyone made salmon cakes and know of a good recipe?
I would use it on a salad with a very flavorful vinaigrette.
It's good in salad. It's also good in pasta with a light creamy sauce and peas. My kids love it. For the sauce, heat some milk, add a little butter and olive oil, then a good amount of parmesan, salt, pepper (optional: garlic powder adn a dash of nutmeg). Heat until the sauce is bubbly and slightly thickened, then toss with pasta, flaked salmon, and some defrosted frozen peas. Yummy.

I tend to make things like this with leftover salmon. (I make it up as I go but I stole this off eHow to give you an idea).
The key is that there be a bunch of other flavors to rev up tired poached salmon. I mean, LOOK at all the flavors going on here: Things You'll Need: 1/2-1 lb of Fresh Salmon (cooked and deboned) 1- 8 oz package of cream cheese 1 cup of sour cream 2 tsp of lime juice 1 TBS of lemon juice garlic power savory 1- medium onion chopped 1-2 TBS of horseradish sauce. 2 tsp of black pepper. hand mixer large mixing bowl http://www.ehow.com/how_5357859_make-fresh-salmon-dip.html |
With pasta and a creamy sauce?
Pour a teriaki marinade over it and reheat.
My 5 year old loved the salmon cakes one of the demonstration ladies made at Costco a while back. He threw 10 cans of salmon in the cart! It was just salmon, a beaten egg, and some salt and pepper, and sauteed in a skillet. She suggested adding some grated onion at home. I imagine that leftover salmon would work too, maybe coat it in some breadcrumbs before cooking.
Salmon hash.
Salmon croquettes. There are many recipes online. Very simple to make.
