The Plot by Jean Hanff Korelitz

The Turnout by Megan Abbott. Darker but everything she writes is compelling.

Matrix by Lauren Groff. More demanding but so good.

Outlawed by Anna North. Amazing.

I loved Sea of Tranquility, too.

Remarkably Bright Creatures is sort of literary enough but also beach read-y enough that it might fit the bill! I listened to the audiobook and really enjoyed it.

I stumbled into a stash of my mom's old Erma Bombeck books while visiting her a couple of weeks ago and laughed my head off reading them by her pool. I might start in on my dad's Dave Berry books next.

What about Beach Read? That was my first thought when I read the OP.

Agree with PP. I like all of Emily Henry's books, but Beach Read is her best.
