Is it risky to eat? I've heard that 2 hours at room temperature is the maximum.

Might be okay, but I wouldn't chance eating sushi left at room temp for more than an hour.

Unless it was left in a scorching hot room (like a sun porch in the summer), I would eat it without hesitation.

Depends on the type. If it has raw fish in it I would not eat. Also room temp rice can have a very bad bacteria grow in it.
