I have ~15 min. to stop at the grocery store on my way home from work to grab something to make for dinner tonight.
We are a family of 5 (3 elementary-age kids). Two of the kids hate fish. We eat mostly everything else. Please share what you're having tonight so I can steal your ideas! |

I've got white chili cooking in the crockpot. 50-50 chance my son will eat it (he either loves it or hates it, depending on the day).
Some ideas for you: Super easy - grab a Rottiserre chicken or two, a box of couscous, fruit, and frozen veggies. If your feeling really tired, drop the couscous and pick up some bread/rolls. Spaghetti? Raviolli? Chicken Breasts sauteued in some olive oil with some seasoning (I have some lemon-garlic stuff that is good if used in small doses). I think my recipe also says add some chicken broth. |

Too late but keep this one in your glove compartment:
Get a rotisserie chicken, box of chicken broth, can of fire roasted diced tomatoes, small can of corn, tortilla chips an onion and some cilantro. Slice the onion and sautee in oil. While the onion is getting soft, shred the chicken and add to pot pot along with some cumin and the tomatoes. Dump in the stock and simmer all for about 15 min. Top with cilantro and crushed tortilla chips. |

Pizza!!!! I just got a pizza stone, one has come out so far meatball and cheese, turned out really good. I use the whole wheat pizza dough from trader joe's. Next is chicken artichoke and roasted red peppers.
I get pre-made meatballs and rotisserie chicken and a bunch of stuff from the olive bar to make pizzas so it is super quick. |

Do you like Thai curries? Easy to make at home. Whole Foods sells the small cans of red, green or Panang curry paste and cans of coconut milk. Use only a SMALL SPOON OF THE CURRY PASTE - it's very spicy! Just sautee it up with peanut oil, onions and whatever veggies you like (we use carrots, cabbage, grape tomatoes). Add cut up boneless chicken breast and coconut milk.
Hubby made it tonight and it was awsome. Added some basil at the end. It took only around 20 minutes. |
| ditto on the Thai curry... although I use the entire jar, I put in a can of coconut milk, veggies, chicken or shrimp over jasmine rice ( they do steam bags for the microwave, super easy). It takes about 15 minutes. I also add brown sugar and lime juice with some chopped cilantro just to make it seem a little 'fancier' but actually only 5 seconds of my time. let's see... we did grilled cheese and a quick roasted red pepper/tomato soup last night that made everyone happy. |
