Too many mushrooms: what to make?

I ended up with a family-sized pack of white mushrooms. Suggest something to do with them? I don't want to make strogonoff, which I love, because I don't want to tempt myself with the sour cream.

I do have on hand: onions; a shallot; some chicken legs (skin on) and chicken thighs (boneless skinless) in the freezer. White and red wine. I could improvise with those ingredients but I wonder if you have a particularly yummy recipe you like along those lines. Thanks!

What about doing chicken and veggie fajitas (with the mushrooms, your onion and some bell pepper)?

Air fry with shallot and garlic (tossed in olive oil) til they’re shriveled. Use over rice, mash, or meat.
