Your best vinaigrette recipe

I'm making a "special" dinner and want to include a salad of mixed greens dressed with an amazing vinaigrette. Preferably not balsamic, but that's ok too.

Ideas?

Champagne shallot vinaigrette. I add a bit more shallots and reduce the honey a touch, but that's all to taste.

I'm half Asian, half European. My favorite vinaigrette has just two ingredients: Japanese soy sauce and balsamic vinegar.

Pick a good vinegar of your choice, add olive oil, a pinch of salt, some freshly ground black pepper, a touch of crushed garlic, and—this is key—some Dijon mustard, which acts as an emulsifier and keeps the oil and vinegar from separating.
