I second this. The one we went to started seating early - a fair amount (1.5 hours?) prior to the start of the luau, so we were in the direct sun. The actual luau takes quite a while, to include the show aspect and ends quite late, so I'd suggest a wrap or light sweater (yes, even in Hawaii) as you're most likely going to be seated near the water.
