What can I make - eggplant, tofu, odds and ends

Last day in the AirBnB and I have - three Japanese eggplant, 1 red onion, half a head of garlic, a whole bunch of scallions, two corn tortillas, a half stick of butter, a block of firm tofu, broccoli - one head, half bag of baby potatoes, half a box of penne pasta.

Spices- soy sauce, cumin, curry powder, cayenne pepper, salt, ketchup, green Tobasco, vegetable oil.

I feel like all the veg and the tofu could go into a stir fry, and then you could stuff it into the tortillas like a fusion taco. I think I might do the potatos separately with garlic, onions, curry powder and butter and then just take the pasta home or toss it.

That’s what I’m thinking too.

Use the eggplant and tofu, onions, garlic, scallions to make a stir fry. Steamed broccoli as a side.
Take the pasta and potatoes home.
Leave the rest behind.

OP here : thanks for the ideas - ended up doing a eggplant and tofu stir-fry hash like thing, sliced steamed potatoes, roasted broccoli and butter tossed penne. Everyone was tired from the beach so it was all eaten up!
