Your favorite vegetables for soup? - low carb/GI and max nutrients/taste

I'm trying to boost my nutrient intake and like soup. My go tos are:

-miso/soybean paste soup with tofu, onion, green onion, zucchini, carrot
-chicken bone broth with carrot, celery, onion, chard, mushroom.

What are your favorite things to add to soup? I'm trying to stick with lower GI ingredients too.

5 or 6 handfuls of spinach... which will cook down to basically nothing in a couple of minutes!

Garlic and onions of course. Parsnips add a nice flavor too. Then celery and carrots for the base.
