I am looking for lentil recipes that my kids and DH will eat, that are summer-y. In colder weather they will all eat lentil soup, and i frequently mis lentils 50-50 with ground beef (think Spaghetti sauce, chili, taco meat).
They will not eat lentil salad (heck, they won’t eat pasta salad). Lentil burgers are probably a no-go. I think we need recipes where lentils can supplement the meat, but with strong enough flavors/sauces that the lentils aren’t really noticeable
What can you suggest? All flavors, cuisines etc are good and no dietary restrictions |

Mujudara is great cold or served warm paired with different cold salads; https://www.themediterraneandish.com/mujadara-lentils-and-rice-with-crispy-onions/
I make lentil sloppy joes in the summer, or serve the "sloppy joe" mix over baked potatoes or sweet potatoes, like a jacket potato situation. Lentils also are great in chili. |

This is really good in the summer served with a grilled steak. It's good leftover if you bring it to room temperature:
