Want to get back into cooking.. who is the best chef with recipes to start with?

I'm a decent cook but fell off the wagon. I have picked some blog recipes and they have all been major fails with my husband. Chipotle cream shrimp (BLEH!)...
Who do I need to follow to cook some delicious, straight forward meals? Also bonus if lower carb. Don't want to do any diet/whole 30 recipe books or anything though. Just solid proteins + veggie sides, etc.

+1 for Ina. Everything I have cooked from her has been fabulous. Also, if you like watching chefs cook, then I love Kardea Brown, The Delicious Miss Brown, on Food Network as well as Ina. I also like that singer, someone Underwood, and Molly Yeh.

I think you mean Trisha Yearwood

LOVE Molly Yeh, but have not tried her recipes yet. Agree with others about Ina Garten/Barefoot Contessa. You can trust her recipes.

I have loved everything I have made from Once Upon a Chef. Also Smitten Kitchen is great!

I love Budget Bytes (for cheap and easy but still tasty) and Just One Cookbook for Japanese food. Woks of Life is great for Chinese cooking but their recipes are a bit more involved than I can handle on a regular basis.

Fanny Farmer (specifically the 11th edition) is my go to physical cookbook.

Id add Cookie and Kate - it's vegetarian and so delicious....my favorite over Smitten Kitchen for quality recipes. I also agree Ina Garden is the best overall.

Do you still have a copy of the Joy of Cooking? Many of us grew up on their recipes — so it could be a good place to start, and might be wonderfully familiar for your husband.
