Ok, I'm Indian and vegetarian but don't cook too much and hate following recipes. instead, I may refer to recipes and make things my own. Here's what I made yesterday on a whim that turned out great-- it's like Chole or Chana masala.

Can of chickpeas, drained

in a saucepan, saute two cloves of garlic, finely chopped onion (i used one small onion), a little ginger (i use the squeeze tube which is super convenient).

Add some tomato paste, like a couple tablespoons. Sautee to incorporate. Add a little turmeric (like a quarter teaspoon or even less). Add some garam masala, like half a teaspoon (you can buy McCormick brand). Add salt. I also added Kashmiri chili pepper powder -- just a little, which made it super spicy -- but you can add some cayenne or paprika to suit your taste if you like less spicy. Add a little brown sugar to balance out the spiciness. grind some black pepper.

Add a little water to thin out into a sauce.

Add the chickpeas. simmer for a while, adding more water if it gets dry. If it's too spicy, add more tomato sauce.

I think some people might add Greek yogurt or coconut milk if you like that, but that's a different flavor country for me. This is a north Indian dish.

Eat with heated nan bread, basmati rice, or simply on a buttered bun with sliced raw onion.

Also, I smushed the chickpeas a little at the end. Definitely made it more delicious.
