Fresh ricotta- what to do with it?

Anonymous
I bought some fresh ricotta at a farm stand and it looks really good. What should I make with it? No pasta/lasagna… thanks!

Well, it's traditionally used for pasta or desserts - but you can use in quiche, you can bake it and serve it with good honey and bread.

Meatballs. Mix the ricotta with ground Turkey, parm, basil, parsley and garlic and back in oven. They are delicious without pasta, over a salad, in a sandwich, straight out of the oven or fridge.

1 1/2 c ricotta
1/2 c shredded parm
2 lbs ground turkey, the 93% or higher fat kind, not the only white meat one
1 cup chopped basil
1 cup chopped parsley
Salt and pepper

Mix and form meatballs. Drizzle with olive oil and bake 425 for 25-28 min

This is an amazing ziti recipe. It calls for dollops of ricotta. My kids devour it & I always have leftovers for lunches.

This. If it's fresh, raw is best.

I make a traditional Indian sweet called kalakand. This can be made in microwave and it is basically idiot proof and delicious.
