| I have a dough rising...first rise is 90 minutes. But it hasn't risen much. I need to go out in a bit for a few hours - am I going to kill it if I leave it out? It's pretty chilly in the house. But I don't want to put it in the fridge, since I need to shape it and then let it rise over night. |
| If it's chilly in the house, turn the oven on briefly -- just long enough to feel barely warm. Turn oven off. Place rising dough (in container that is oven safe) into turned-off but still barely warm oven. Go do your errands. |

If it is a 90 min you can’t leave it out a few hours. It will overproof. Next time turn the oven on for 20 seconds then shut off and put the bread in there to rise.

| Also, if you have under cabinet lights that slightly warm the bottom of your cabinet, you can put your rising dough in that cabinet and it acts as a proofing box. |
