Healthiest griddle

I used non stick griddles for years and then came to know that they are unhealthy to use because of the chemicals in their non stick coatings. Even if the coatings didn't peel, the heat reacts with the non stick material making them as not a healthy choice. Someone then told me about ceramic coated pans and I used them. I thought ceramic or glass was healthy in general, and hence ceramic coated was a good choice. Until I again came to know that ceramic coating is different than pure ceramic pots and is full of chemicals. I then switched to cast iron. Now I read that cast iron releases free radicals in the food and those are bad for the brain. So what to use now?? I am thinking about this so much because cancer runs in husband's family. My kids love pancakes, crepes etc and I use griddles quite a bit.
What do people suggest here? Is cast iron still the best option for us as long as it is seasoned?

Yes, cast iron or stainless steel are the best.
