My DH puts salad dressing on every dish no matter what it is

It's so gross! He puts either bleu cheese or Russian on everything. Like we'll be having spaghetti with meatballs, and he'll swirl bleu cheese into it.
Or we'll have burgers, and he'll top his with Russian dressing, and then also put it on his baked potato.
He just came home from the store with Thousand Island and ranch dressing and put the Thousand Island...wait for it...ON HIS PEPPERONI PIZZA.
I mentioned it to him as basically a: "Um, what's with this?" and he said he just prefers the taste of salad dressing to the taste of the food lately.

I...don't...know what to think. Is this a thing???!!

Is this a new thing? Sounds like a highly caloric habit. I could see *maybe* dipping a pizza in ranch, or blue cheese dressing on a burger. The rest sounds weird.

Maybe there is a health reason. Dry mouth? Sounds like he can't tolerate dry foods and may have trouble swallowing them.

He’s upping the calories, fat and sodium of everything he eats. Sounds like a recipe for heart disease.

Can he still smell food? I wonder if he lost some taste sensation due to Covid.

I think the dishes you mentioned in the corresponding dressings are not too crazy.

What does he literally do this with everything? Eggs? Rice? French toast? Enchiladas?

Those combinations (with the slight exception of the spaghetti) don't sound that weird to me. Now, when he starts dipping egg rolls in blue cheese dressing or adding Russian dressing to oatmeal, then I'd be grossed out.

Dressing on a burger is totally normal. A Big Mac is basically a burger with dressing on it. And what's really the difference between ketchup, mustard, and mayo on one hand, and dressing on the other? (Thousand Island, for example, is essentially ketchup and mayo with sweet pickle relish). Dressing on a baked potato also sounds normal -- there's not a meaningful difference between, say, sour cream and ranch dressing. Thousand Island on pizza is a little odd, but tastes are weird. I'd be curious what's driving the change -- is his sense of taste muffled a bit (how's his sense of smell?)? Is his mouth dry (dressing may be a way to moisten things)? Something else?

I don't know, putting bleu cheese dressing into spaghetti sounds like a variation on vodka cream sauce. The Thousand Island dressing on pepperoni pizza sounds weirder to me.
