So what are your go to vegetable cookbooks. Not looking for vegetarian cookbooks. I am looking for new ways to cook vegetables and new vegetables to cook.

I like all of Ottolenghi’s and Sami Tamimi’s books. Heavy on vegetables but also enough to keep everyone happy. I also like:
