Vin Santo wine refrigerate after opening?

We are opening a bottle of Vin Santo wine tonight. Should we refrigerate or leave out after tonight? We will only drink 2 glasses out of the bottle. How long will the wine last?

The refrigerator will help extend the life of the wine, but it is not necessary if you plan to finish the bottle over the next month. The main issue with storing in the fridge is the potential for it to pick up the aromas of foods stored there. If you have bleu cheese, onions, cabbage...I might store on a cool, dark part of the counter and away from a heat source. You also need to allow the wine to warm up in your glass once you want to enjoy it again if you store in the fridge.

A well-balanced Vin Santo could last well past a month or more, but it depends on the quality of the specific bottle. (It is already oxidized as part of the process of making it.)

OP here - bought a bottle of Badia Coltibuono from MC liquor store. Paid about $45 for 375 ml, certainly a splurge for me. It was very good, tasted like a semi-sweet port wine. Went well with the Cavalluci cookies that I found on the WSJ ( see "Best Cookies in the World) from Dec 4th. Enjoy!
