Suggestions of easy to reheat meals for diabetic

Hi all, my father needs to reduce his stress and we are looking for ways to set up some meal prep for him. He's diabetic.

Does anyone have suggestions for meals that are suitable for a diabetic and easy to reheat in the oven and/or microwave? He's more comfortable with simple meals/seasonings but open to try new dishes. We can prepare in advance about once or twice a week. I can think of some standards such as grilled chicken and roasted veggies, a pot of chili, salad fixings, etc, but am looking for a more options. I'm also searching for a website that has lots of meal prep ideas. Thank you!

I think just having lots of washed cut raw vegetables/salad, some cooked meats (grilled chicken, salmon, etc), some jars or homemade dressing would go a long way. Soups and chilis too; some jars of homemade dressing, frittatas.
